6. Pot roast and veg

The co-op had a good-looking chuck roast. Red wine and beef broth with garlic, bay leaves, salt and pepper. Onions and carrots cooked with it, beets and potatoes to roast later (some potatoes will also be used in hoppelpoppel later in the week). I also used the last of a bunch of celery - the thin center with all the leaves. I'm considering it a pot herb for flavoring, but I'll likely eat some of it. DH won't.

Lots of leftovers. There may be a shepherd's pie in my future.
