What's for Dinner, Sunday, Oct. 8, 2023

Palak paneer.


For later, I'm making quinoa tabouli. It has scallions, garlic, red, green and gold pepper, parsley, lemon juice and olive oil. Lotsa' freshly ground black pepper.

Tart cherry kombucha.

Dessert: dark Chinese tea, mandarin orange, toasted almonds.

edited to add...
I rubbed the potato & pork chop with a bit of olive oil, then used at least teaspoon and a half over both. I'd do this again, but I'd likely add 1/4 brown sugar. The garam masala would go really well in a dry rib rub mix.

We’re going to my MIL’s for a couple of days. She’s from Texas and is very proud of her version. All I can say is it has roughly cut sirloin, chili beans, onion, chopped green pepper and topped with cheddar cheese. She refuses to divulge her spices!

I’m sure we’ll have a salad and fresh bread and butter.

The fundamental difference, I’m told, is beans/no beans. My MIL is from Texas but her father was from New Orleans and his influence went into her recipe. Incidentally, even the canned Hormel chili comes with or without beans!

I did discover some of her flavorings: Cumin, chili powder, salt & pepper, cilantro, garlic(!), ground red pepper and Texas Pete hot sauce. I still think there’s at least one more ingredient!

it stretches out the chili. Also, I'm eating less meat these days, so I'm finding I like a bean/meat mixture better than just meat.

6. Pot roast and veg

The co-op had a good-looking chuck roast. Red wine and beef broth with garlic, bay leaves, salt and pepper. Onions and carrots cooked with it, beets and potatoes to roast later (some potatoes will also be used in hoppelpoppel later in the week). I also used the last of a bunch of celery - the thin center with all the leaves. I'm considering it a pot herb for flavoring, but I'll likely eat some of it. DH won't.

Lots of leftovers. There may be a shepherd's pie in my future.

BBQed chicken thighs marinated in a gojuchang mixture, kim chee pancakes, grilled eggplant from the garden, and the last of the noodles from the Chinese take-out a few days ago.
