Thai Coconut Soup (Tom Kha Gai) I get to use my homegrown lemongrass (thanks for coaching, AKwannabee!), also chicken breasts, lime leaves, ginger, jalopeno, mushrooms, brown sugar, fish sauce, and lime juice. Also green onions and cilantro.

I'm making this is my slow cooker because I have no natural gas to fuel the stove in the kitchen. Found a gas leak and the gas company shut the kitchen part of the house off from fuel because of the risk of an explosion. I still have hot water, though, thanks to a genius plumber I lucked upon through a referral. The rest will be fixed next week.

It doesn't really bother me because there is so much you can do with an air fryer, microwave, etc.
