2. Eggplant rollatini

My mother always sliced and fried eggplant, and as a kid, I didn't care much for it. But I'm trying to expand my horizons. My son had tried rollatini in a restaurant this spring, but thought what he had was watery. This recipe https://www.themediterraneandish.com/eggplant-rollatini-recipe/#wprm-recipe-container-15057 has you sweat the slices of eggplant and then bake them before stuffing, so I'm hoping that solves the problem.

I have some broccoli also, so that will round things out. And there's leftover birthday brownies ....
