8. An odd combination

It was a lovely afternoon in the Catskills and we decided to spread our dinner over several hours. There really isn’t any continuity to this meal!

The afternoon was lovely and we had gin & tonics on the banks of the Upper Delaware River where we saw many wildlife while we nibbled on cheddar cheese and apple slices.

Later, I made a couple of salads with a bed of iceberg lettuce. On top went thin slices of red onion, thin slices of orange peppers, capers and a lemon wedge. Then the piece.de resistance : Thick slices of cucumbers with the seeds scooped out and replaced with black lumpfish caviar. Also, cherry tomatoes hollowed out and filled with more caviar. Then the lot was drizzled with olive oil and Balsamic vinegar.

Later still, we had tortolonies stuffed with Parmesan cheese and Prosciutto de Parma and topped with pesto sauce made from the Landlady’s basil crop.

Brandy and “The Remains Of The Day” for dessert.
