with it or (preferably) own a restaurant, buy the smallest quantity of toasted sesame oil you can find, it tends to go rancid rather quickly once it has been opened, even in the refrigerator. Yes, that unit price on the big liter bottle makes it look like a bargain, but stick to the overpriced 4 ounce bottle. You'll thank me for this.

Back in my hippie days, I loved tofu fried in a combination of safflower and sesame oil, garnished with sesame seeds and chopped scallions, served with dipping sauce of the moment. I haven't done it since I lost my ability to drive someplace to buy tofu.
