Would this be a good place to share favorite Camping recipes?

Mountainman Breakfast is the best to feed a group

Fry up in a dutch oven
1/2 pound bacon
1/2 pound sage sausage, cooked and crumbled
1 medium onion, 1 green or red pepper diced

When cooked add

1 2-pound bag hash brown potatoes, diced
1/2 pound extra sharp cheddar cheese, grated
1 dozen eggs

stir-fry until cooked or bake with coals on cover like a quiche

Can substitute raisins for the apples.

Tuna on a pita with ... string cheese.
Peanut butter on a pita and some fruit

The common theme is that you won't crush the meal and it requires no refrigeration.

I have gone 24 hours on Clif Bars and Starbucks double shot fraps. The mulberry tree in the campsite was da' bomb. Summer in Wisconsin!

How about macaroni and cheese with a 6 ounce can of salmon, a can of peas, and fresh spinach? We are big fans of one pot meals for the easy clean up. Don't forget the Mrs. Dash!

I will usually take along a pack of flour tortillas (I like corn, but they tend to crumble), heat or toast them near a fire or atop an implement, and stuff the goodies into them. It certainly fills you up. They pack easily, though they are a little heavy.

4. Hammer chicken

1 whole chicken
Salt
Sage
Pepper
Foil
Hammer

Light campfire, let it burn down to a bed of coals.
Take whole chicken and place it in a large enough piece of foil to wrap it twice.
Add salt, sage and pepper.
Wrap chicken in foil tightly.
Place wrapped chicken on hard flat surface.
Beat chicken with hammer, a large flat rock will work.
Beat till flat and you know all of the bones are broken.
Toss onto coals for 20 minutes or so, depending on thickness and coals.
Remove, unwrap and eat.
Pick teeth with shattered bones.

I was camping way out on the North Rim of the Grand Canyon and met this French tourist.
This is how he made his chicken.
Hammer Chicken.
True story.
Never saw anything like it.
Hung out with him for a few days but he never got weirder than this.
Thank goodness.

I like to make a tofu scramble by throwing a block of tetrapak tofu in a ziploc bag with some spices and mashing it about until it gets nice and squishy. Then I dump it in a "bowl" made out of foil with some oil and drop that sucker right in the fire. The smoke adds a great flavor to an old vegan standby.

I make and freeze a batch of vegan lasagna (cut into servings before freezing in foil) and cook it in the coals until it's nice and bubbly.

Frozen potatoes help keep the ice chest cold and make great breakfasts in a cast iron pan over the morning warming fire.
