I've been looking for a good dungeon crawler without all the D3-like crap since I finished torchlight 2.

I'm a timid dungeon crawler- engage, back off and let my minions pick them off from a distance, then go gather the loot. If I don't have minions, I better have ranged weapons.

Do enemies endlessly spawn, or once you've cleared an area does it stay cleared until you leave for a while?

and there are different levels of difficulty on the maps as you progress your character.

You can choose between all 3 characters anytime in game - mage, archer and warrior. (storage and items to carry is very limited).
There is an Abilities and Skills section, which you can reset for a price in gold.

There are some Kings Road youtubes out there you might want to have a peek at.

I find demo videos don't usually answer the kinds of questions I have when evaluating dungeon crawlers. I'd rather find a forum where players hang out, or pester someone who's currently playing.
