What's for Dinner, Wed., March 25, 2026

Naan bread pizzas with mozzarella, roasted Italian pepper, and hot Italian chicken sausage crumbles. Caramelized onions over the top. Anchovies, of course, and fresh basil.

Here's the nice thing about naan bread pizza "crusts:" They are very economical. I priced them out vs. flatbread and ready-made pizza crusts. A flatbread is about $1.99 ea. The ready-made crust encased in plastic wrapped is more like $4, sometimes more. And my naan breads are $2.99 for 12, which comes out to about 25 cents each.

You can buy pizza dough for a reasonable price, though, but you have to roll it out yourself.

For an appetizer, a cup of creamed cauliflower-roasted garlic soup.

Tossed green salad made this morning; has ruffly green, chopped Granny Smith, apple, toasted pecans, celery, dried cranberries, and citrus vinaigrette dressing. Goat cheese.

Dessert: chocolate brownie cookie and decaf coffee.

Spent a couple of hours unloading cordwood off a trailer then into the barn so I’ll have to find a way to prop myself up in the kitchen. Remember what was said about the old, gray mare? She ain’t what she used to be!

~ Homemade, leftover asparagus and tomato quiche
~ Side of carrots with tarragon butter
~ Tomato juice with lemon and pepper
~ Sadly….no dessert unless you count a teeny peppermint patty I had during the day’s wood-hauling phase. Two bites and it was gone.

Paneer is Northern Indian cheese. Veggies I used were onions, spinach, cukes, tomatoes and mango chutney.

... and wide noodles.

I'm not sure just what kind of noodles these are. They were hiding in the back of the freezer. They look like they could be rice noodles .

Steam-fried in evoo and veggie broth: chopped onion, scallion, green bell pepper, sliced cauliflower florets, mushrooms, minced garlic and ginger. When done I added air-fried red potato cubes, chickpeas, green peas and a slurry made from Patak’s curry paste and veggie broth and gave it a good stir. Cheers!🥂

with extra cheese. Our waitress said the kitchen workers told her to serve this before they eat it. It did smell really good.
