What's for Dinner, Sat., April, 5, 2025

It's cool and rainy here. Chicken matzoh mall soup with vegetables. I'm too tired to do anything else. Walked 2 miles to the protests-- need a nap.

Cranberry kombucha.

Toasted artisan bread.

I think I had hamburger helper maybe back 40 years ago, before I went primarily vegetarian and pescatarian.
I had so many ailments and health problems before I changed my diet.

It’s rainy and bleary here in the Catskills, but what-the-heck. Am marinating some chicken breasts now, and those’ll be served with a big green salad and a little jasmine rice. Red wine from a box. Ordinary fudgcicles for dessert.

Have a great weekend, y’all.

Peanuts, cashews, and mixed veggies, egg whites, bean sprouts, mushrooms, marinated in vegetable soy sauce. The curry recipe was posted once on this thread, and I have had it multiple times. The tofu was baked to a crisp with a nutritional yeast coating
Always making a batch to last 2-3 days.
over jasmine rice tonight, my 3rd day and last.

this recipe is incredible, delicious, light on the stomach and all the spices and flavors give it a 5 star wow.
the crunchy texture of the baked tofu with the other ingredients (nuts, sprouts, mushrooms veggies) just merge together very well with the soy sauce.
It is very easy to make once you have all the proper cooking utensils ( I press the excess water from the tofu with a press b4 adding the spices)
It takes a little getting used to the procedure involved but it is a favorite for me now. I don't go through that often maybe once every 3 months.
