What's for Dinner, Wed., January 15, 2025

Posting early due to working late.

Acorn squash cooked with maple syrup and stuffed with sausage.

Stir fry broccoli and carrots, cut in matchsticks.

Pomegranate kombucha.

Dessert: Half slice of lemon ginger cheesecake. Lady Grey tea.

Butternut squash is simmering now.
I plan to add PB to the bowl when I eat it to make sure I like it rather than adding it to the whole pot of soup and regretting if I don’t. I have not had PB soup. But Imma try it.

4. Spicy Red Lentil Vegetable Soup

Red lentils cooked in veggie broth with bay leaves until they cream out. Meanwhile in a separate pot steam fry in evoo and veggie broth: chopped onions, carrots, celery, orange bell pepper, cabbage, zucchini and garlic until done. Add sliced mushrooms and steamed peas, then add the cooked veggies to the lentil pot. Spice with cumin, parsley, hot pepper flakes and salt and black pepper. Toasted multigrain bread spread vegan cream cheese with chives to go with the soup. Iced black tea with lemon. Cheers! 🥂

6. Beans 'n' greens

Simple and quick with an InstantPot: pressure-cook a bunch of beans, the kind doesn't matter. Today it's small white beans. When they're done, put the pot on simmer and add some greens - today I'm using Swiss chard from the garden. You can throw in any other ingredients if you want - I'm using up some sausages that claim to contain habeneros but they could fool me. Simmer until you're ready to eat.

Mr. Retrograde is making cheese biscuits to go with the stew.

Elbow light macaroni
Plant based crumbles and navy beans
Onion, garlic, celery, tomaoes, red and green pepper
Spices and herbs
Topped with a sprinkle of Parmesan
Enough for six meals—five go in the freezer.
