What's for Dinner, Sat., Jan. 11, 2025

Tossed greens with chopped pear and goat cheese that has been marinating in rosemary olive oil for a few hours.
Salad dressing is made with pear vinegar as the acid in my homemade vinaigrette. Toasted walnuts over the top.

Butternut squash ravioli with pancetta, toasted pecans, and olive oil.

Dessert: red velvet cupcake filled with whipped cream.

A basic boring meal. I'm not big on steak, but my other half loves it.

I make this about once a month or so and use the leftovers in wraps. Basically it’s a meat loaf recipe that uses mashed canned beans (I used black and pinto, any kind work) instead of ground beef. Other ingredients are sautéed minced onion, celery, bell pepper and garlic, tomato sauce, agave, soy sauce, Italian seasoning, whole wheat breadcrumbs, rolled oats. It’s baking now. Before done I put chili sauce on top and bake for 15 more minutes. Also having steamed snap peas and mushrooms mixed with quinoa and Miyoko’s butter. Might also microwave a sweet potato. Comfort food night. We love those healthy carbs. Cheers! 🥂

usually I make that with leftover lamb roast, but this is with ground lamb. Dessert is homemade oatmeal cookies.
