Chinese noodles with cilantro dressing. I found a beautiful bunch of cilantro with roots on part of it, so I will stick the rooted ones in a pot to see if it will grow indoors (I'm desperate for growing things this time of year) and the rest will go for cilantro pesto. The pesto is an ingredient in the Chinese noodles recipe.

My brother sent me a package of noodles that I'm trying out tonight. He's diabetic, so he's always finding these items that are low carb. This is a package of noodles made from peas, lentils, and zucchini. Veggie Craft makes them. They are gold-reddish in color.

The pesto will also be on a veggie sandwich made with breaded eggplant and mozzarella cheese. Chipotle, too. Toasted artisan roll.

Ginger lemon kombucha.

Hot chocolate for dessert. Nestle has these new chocolate chips called chocolate chip marshmallow. I put in a sprinkling with my hot chocolate and top it off with whipped cream. It's 30 here, feels like 18 because of the wind.

Stir fry in evoo: minced red onion, garlic and shredded carrots until soft. Drain and mash a can of black beans. Combine the 2. Add whole wheat panko bread crumbs, a flax egg (1T of milled flax seed and 3T of water), cumin, garlic power, smoked paprika, salt and pepper. Mix. Chill. I bake them instead of frying. Served on toasted sprouted multigrain bread. Homemade lemon-tahini dressing, lettuce and tomato on top. Also having leftover Minestrone soup. Iced Earl Grey tea. Cheers! 🥂
