I messed up tho
Didn’t process the lentils so the patties are falling apart. Tastes good but a disaster in the pan!! lol.
And a red Anjou pear to go with.
This will be my main meal as I work tonight.

I will try this again!! I was supposed to put the herbs and lentils in the food processor.

My blood sugar has been pretty erratic today, so I have to watch what else I eat tonight. I have eggs and veggies to work with, so maybe an omelet.

… so it’s a meal of desperation (sort of) as all I have that interests me is a pound of Brussels sprouts, which I’ll halve and brown in olive oil, toss in walnuts or pecans and a handful of cranberries, and finish with some raspberry-walnut vinaigrette as a glaze. Earthy, bitter, sweet, and so good that my daughter has been known to threaten to arm wrestle me for the last bits.

Salivating at that pomegranate kombucha, which would be perfect with this!
