(4,940 posts)Close cousin of gazpacho, it's simply tomatoes, olive oil, garlic, and bread all blended together. Of course you need the best tomatoes, since that's all the flavor there is, but when you use them it's sublime.

(113,130 posts)and are meant to be refreshing, where hot soups would just be too heavy and unpleasant.
Examples are vichyssoise, a potato, leek and cream soup that is wonderful hot or cold, gazpacho, which is a tomato vegetable soup that is put through a food mill or blended to make it smooth, or yogurt or fruit based soups..
They're a good way to get some nutrition during the dog days of summer when no one feels very hungry because it's just too hot to eat.
