Chilled vegetables. Totally yummy! There are other summer soups made with veggies that are also good, but Gazpacho is refreshing in the extreme!

Close cousin of gazpacho, it's simply tomatoes, olive oil, garlic, and bread all blended together. Of course you need the best tomatoes, since that's all the flavor there is, but when you use them it's sublime.

cold beet soup is popular in the summer. Besides beets, dill is common, and cultured milks (kefir, yogurt) are too.

and are meant to be refreshing, where hot soups would just be too heavy and unpleasant.

Examples are vichyssoise, a potato, leek and cream soup that is wonderful hot or cold, gazpacho, which is a tomato vegetable soup that is put through a food mill or blended to make it smooth, or yogurt or fruit based soups..

They're a good way to get some nutrition during the dog days of summer when no one feels very hungry because it's just too hot to eat.
