What's for Dinner, Fri., April 4, 2024

Lasagna. Haven't had this in an age. I didn't make it, I bought it because I have so much planting to do this weekend. It is a good one, made by some native NJ Italian company. Tossed green salad.

I was seated on the edge of my bed when the earthquake came. It would be only 25-30 miles west of me near Lebanon and Whitehouse Station. I was tickling Oliver's ears when it hit at 10:23. I knew it was an earthquake because I remembered the last one--I was in front of a class. I felt queasy and disoriented. Oliver didn't even notice. It only went for 3 seconds.

Pomegranate kombucha.

Maybe THAT's why I got out of bed when I did! tho I don't recall any shaking, nor did my family which lives nearby, 60 miles south of DC.

You say you don't recall shaking, but did you perceive what was happening as an earthquake?

My house was built in 1871 and is built so much more solidly than new construction. Walls that are a foot thick in places. Yet it still shook!

Double breaded and pan-fried boneless pork chops served with lemon and various hot sauces.

Steamed asparagus and white rice on the side. Cold local beers, (Roscoe, NY).

I was sitting at my desk in NE Pennsylvania when the tremor hit. I thought a tree had fallen.

I have been chopping this afternoon: bok choy, celery, leeks, baby belle mushrooms (cremini) green pepper, red onion and used shortcut shredded organic carrots, frozen edamame (no shell), organic veggie mix. The seafood is from the frozen Aldi freezer. The stir fry sauce is coconut aminos and reduced-sodium soy in a simmering olive oil and a tbsp, of balsam vinegar and garlic. I forgot to add the organic peanuts. Oh well, next time. on edit: I did throw in mung bean sprouts.
Leaf lettuce salad is simple just fresh green leaf lettuce chopped with the celery, green peppers used in the stir fry. I added a boiled egg sauce (just a dab of mayo with balsamic vinegar) for dressing; the egg is from my neighbor's flock.

Trader Joe's frozen jasmine rice (to make my evening a little easier).

All that chopping you described reminded me that I’m going to do more stir fry.i did one the other night to go with my chicken in peanut sauce. I got the wok very hot and did that ever make a difference. The vegetables had a nice brown or gold to them and seemed sweeter.

One kind of makes up for the vegetable chopping time with the shortened cooking time.

...so I'll start the prep work later. We'll have BBQ baby back pork ribs, mac & cheese, green beans, and a Caesar salad. They're bringing a dessert, I don't know what.
