What's for Dinner, Fri., March 29, 2024

Pan-fried salmon in curry cream sauce.
It has mild curry powder, lemon juice, ground ginger and salt & pepper.

Romaine lettuce tossed salad with cucumber, radish, bell pepper, red onion. I'm adding microgreens from my garden. Caesar dressing.

Pomegranate kombucha.

Dessert: blueberry kefir over a toasted waffle with additional fresh blueberries over the top.

Decaf coffee.

Chicken broth and toast for me. I'm getting over a bout of norovirus on top of a UTI. Been sick all week, on antibiotics and feeling wimbly and awful still, about to hit the couch and watch basketball.

Husband has been foraging for himself. I feel sorry for him, but what's a sick woman to do?

and had chicken thighs with curry cream sauce and pasta last night!

Not sure how I’m going to do the salmon, it’s defrosting on the counter now. I might do a salmon BLT with spinach.

Chocolate Chip cookies for dessert.

Edit: I made bread and had the salmon blt on it. Oh my gawd it was good!
Toasted the cut side of the bread in the bacon grease, slathered on Hellmann’s, cheddar, thick cut bacon, and salmon (cooked that in the air fryer) and fresh spinach. Diced tomatoes on the side because I don’t like getting my bread soggy. Heavenly! Can’t wait for garden tomatoes this summer, my BLT consumption will be ludicrous.

Using the leftover bacon from yesterday's breakfast.

Al loves BLTs. I tried to convince him to save the bacon for a pizza at the beginning of next week, but he knows we have lettuce, tomato and great toasting bread. There was no talking him out of a BLT.

Good Friday is a holiday at my evening job, so I get to cook for my family tonight. I'm also doing some cooking and baking for Easter: a saffron & raisin pound cake tonight. I've already hard-cooked a dozen eggs to make deviled eggs. Tomorrow I'll bake some carrot cake mini cupcakes.
