What's for Dinner, Tues., Feb. 27, 2024

I was going to make a stuffed mushroom but my artist friend dropped off a package of hot chicken wings! In addition a tossed green salad with goat cheese, peppers, tomato, and cucumbers.

Corn muffin that I baked this morning.

Strawberry pineapple kombucha.

we want to take advantage of the warm temps.

For dinner: grilled t-bone steak, grilled potato/onion packet and corn salad with creamy Italian dressing.

So panko breaded pork cutlets with cabbage threads and rice, with tonkatsu sauce, roast asparagus, and a tomato-cucumber salad. I sous vide the pork first so it's tender and juicy. Maybe I'll tempura the asparagus instead of roasting it, if I feel industrious.

6. Catfish in the air fryer

Not a huge catfish fan but it’s what I have. It’s soaking in milk now while I look at recipes. I don’t have any cornmeal but do have masa harina so will make a light breading out of that mixed with regular flour. Heavy on the spices, both on the fish and in the breading mix.
Green beans with crispy ham bits and garlic and some sort of potato as the sides.

Nothing for dessert
There are some weird key lime candies kicking around somewhere if my sweets craving gets too unbearable.

I have been cleaning and re-organizing my kitchen and I've been finding stuff like that, too! I found a real goldmine with some gellee candies, very high quality stuff which I don't even know where it came from . There were only five and I spaced them out over a week!

I put a milk chocolate bar in my glove compartment thinking that if I got desperate enough I could go out there. That worked, too. Chocolate bar lasted over two weeks. If it was in the house, it might last two nights.

Hope ya' find those weird little candies, happybird!

7. I made a chicken casserole

I had a lot of leftovers to use up, so I made curried chicken vegetable soup, too. For the casserole, I used the Stove Top Stuffing box recipe, but made it from all homemade ingredients. I used the remains of the last 2 loaves of bread I had baked, and made stuffing. I made creamed chicken gravy/soup from scratch, added some classic Caesar dressing, frozen mixed veggies. I put the casserole together, part of the stuffing on the bottom, then the creamy chicken, some shredded cheddar, then the rest of the stuffing, baked it loosely covered at 350 for 30 minutes. Shut the oven off, added the rest of the cheese and some french-fried onions, and put the casserole back in the oven for a few minutes.

Used the rest of the ingredients to make soup, and added a potato.

For dessert, I made a low-carb cheese cake dip and had some chocolate cookies dipped in that.

Now, kitchen duty!

that's a energy-saving trick I use, too. I learned it back in the days when energy conservation was being emphasized after the oil price increase way back when. It's amazing how much an closed oven can finish cooking.

As you know, I'm sure, you can do it with the stovetop, too.

Anyway, your chicken casserole sounds so, so good. Wow. I would love to have some comfort food soon, like what your chicken casserole is and what Miss Millie's ham steak dinner was.

way back in the 50s. She called it free heat She'd let things finish on the burner. I learned as an adult, you can't do that with a gas stove. lol

Ty for the kind words about dinner. When I get to read your post, which I often wait to see, I fantasize about creating such pretty meals

macaroni and cheese

black raspberry ice cream for dessert
