What's for Dinner, Mon., Feb. 26, 2024

Since I'll be working late at the greenhouse, I'm going to have one of my stuffed peppers from yesterday. I think I'll also melt Swiss cheese over a portobello.

Fennel/Napa/cabbage salad, also from yesterday. This time with chopped green apple.

1. Leek and onion soup

A green salad.
Green tea with lemon and ginger.

Had a big hearty bowl of leftover pozole just now so will eat lite for dinner.

2. Monday plan

Leftover eggplant parm

Leftover meatball sauce and pasta. Grated cheese.

Maybe a red wine

3. Crab cakes

Homemade last week and frozen uncooked. I'll pan fry them.

Roasted red potatoes and a green salad.

Lemon sorbet.

4. Well, they're leftovers

Lamb merguez sausages with butternut squash and peas in apricot and coriander sauce

I made them last week and planned to have them on Saturday but for various reasons we didn't. So we're having them tonight.

5. The last of the sausage and vegetable tray bake

from Friday. And now I'm out of leftovers and will have to actually think of something to cook tomorrow.
