What's for Dinner, Sunday, Feb. 11, 2024

I had a craving for a dish I'd made from Kitchn blog a few months back. It is feta cheese bake with tomatoes and garbanzos. It's baked on a sheet pan. Has herbs, hot peppers, garlic, olive oil. It is fast and simple to make.

I baked it during the time I worked at the garden this afternoon. I used tomatoes (mixture of cherry, golden pear tomatoes, and beefsteak) I'd frozen from last year's garden. Unfortunately there weren't enough, so I had this genius idea from my recent cabinet clean outs: Use Bloody Mary tomato mix. Did that ever work well.

In addition, had cucumbers in mirin. Crusty roll with a bit of sliced ham and chipotle mayo.

Basically appetizers.
Thai chicken and basil spring rolls with a bunch of dips: sweet chili, polynesian, and hoisin sauce.
Assorted cheeses with crackers.
Choice of wine or non-alcoholic beverage.

Don't know how I'll fix it yet - maybe tacos. Sides will be fried plantains and a broccoli slaw. I need to make an orange cake since the tree is going crazy this year: I've put half a bushel out for people to take but there are still a lot, and I'm tired of squeezing oranges for juice.

ETA: the tacos and slaw somehow turned into a mock Kalua pork with napa cabbage, with a couple drops of liquid smoke standing in for the kalua pit.

The chicken nuggets are from frozen. I don't like the icky-sweet sauce that comes with the bag though.
