My brother and I are making a riced cauliflower pizza together, although we're around 1700 miles apart. He's making one in his kitchen and I'm making one in mine. I'm putting mozzarella and shishito peppers on mine; I don't know what he's putting on his yet.
I found it difficult to find a recipe for one using riced cauliflower, which is what we're both using because it saves so much time. I did find that you need at least a 24 oz. pkg because you need three cups of riced cauliflower.
That and a tossed green salad will round out the meal. Caesar dressing. Green peppers, scallions, and cucumbers with fried wonton strips.
Now, dessert: I invented this last night and it's a low-carb cookie for dessert that's really good! I bought no-sugar biscuits, which I found for only 99 cents in the kosher section of ShopRite. Then I spread chocolate hummus on them and dipped them in walnuts. Yum!!

(10,846 posts)Going out for dinner with a friend to a local Mexican place because my husband is down in SW VA surveying a community college there for putting in surveillance cameras and won't be back until tomorrow night. It'll be good, whatever it is!

(37,757 posts)I actually like the vanilla better than the chocolate. Looked on the label and didn't see sugar added, either.
Get it at Aldi's, where hummus is very reasonable. When I was in the kosher section of SR, I was appalled to see they wanted nearly $8 for a container of hummus!
In another spot, they still wanted several dollars more than what Aldi charges.
Hope you have an Aldi's nearby!

Rice, cauliflower, cucumbers - very, very tasty

For me tonight, baked sweet potato, and chix thighs (from grocery store's rotisserie.) Ice cream for dessert (unless it's too cold in my TV room!)
