What's for Dinner, Wed., Jan. 17, 2023

My brother and I are making a riced cauliflower pizza together, although we're around 1700 miles apart. He's making one in his kitchen and I'm making one in mine. I'm putting mozzarella and shishito peppers on mine; I don't know what he's putting on his yet.

I found it difficult to find a recipe for one using riced cauliflower, which is what we're both using because it saves so much time. I did find that you need at least a 24 oz. pkg because you need three cups of riced cauliflower.

That and a tossed green salad will round out the meal. Caesar dressing. Green peppers, scallions, and cucumbers with fried wonton strips.

Now, dessert: I invented this last night and it's a low-carb cookie for dessert that's really good! I bought no-sugar biscuits, which I found for only 99 cents in the kosher section of ShopRite. Then I spread chocolate hummus on them and dipped them in walnuts. Yum!!

Going out for dinner with a friend to a local Mexican place because my husband is down in SW VA surveying a community college there for putting in surveillance cameras and won't be back until tomorrow night. It'll be good, whatever it is!

I actually like the vanilla better than the chocolate. Looked on the label and didn't see sugar added, either.

Get it at Aldi's, where hummus is very reasonable. When I was in the kosher section of SR, I was appalled to see they wanted nearly $8 for a container of hummus!

In another spot, they still wanted several dollars more than what Aldi charges.

Hope you have an Aldi's nearby!

Roasted it over the weekend, and A cubed some, added Patak’s Butter chicken sauce.
Rice, cauliflower, cucumbers - very, very tasty

I made a fresh pot of curried chicken vegetable soup with barley. I added the rest of a fresh tomato and the rest of the fresh spinach.

My brother is much more creative than I, travels a lot so not easy to catch (and we're 1000+ miles apart.)

For me tonight, baked sweet potato, and chix thighs (from grocery store's rotisserie.) Ice cream for dessert (unless it's too cold in my TV room!)
