What's for Dinner, Sun., Jan. 7, 2023

Did you see Floyd R. Turbo's thread on National Bean Day? It was in The Lounge. It inspired me to do more with legumes and beans, so I'm going to make this salad from Cookie & Kate.

My other inspiration for this is that I've been reading Dr. Greger's book How Not to Die and he recommends 3 servings a day. Well, a serving is only 1/2 cup so that's easy enough. He has an app where you can check off his "Daily Dozen," which includes 30" of exercise, too.

The salad has black beans, corn, yellow pepper, cherry tomatoes, red onion, cilantro, and jalapenos. Kind of a lime-vinaigrette dressing.

Cold poached salmon with dill-sour cream dressing, but if I can't find what I like at the store, I'll just have spanakopita.

Wish I had an Instant Pot! I will have to navigate the pressure cooker.

For dessert, blueberries and yogurt. Toasted almonds on top.

Decaf mocha.

A dozen raw oysters with lemon, cocktail sauce, horseradish and vinegar.

Salad of red leaf lettuce, cherry tomato halves, red onion and pine nuts with balsamic dressing.

Small crab cakes with lemon and tartar sauce.

Ice tea, popcorn and football for dessert.

I picked up fresh veg yesterday; while I was in the store, these two dishes popped into my mind because the required items looked especially good.

I think they call it corn salad, even if there are more beans

I had a piece of salmon and raw-fried potatoes

I recently indulged myself and ordered some spices from this source: https://allspiceonline.com/ and one of the things I got was Herbes de Provence, so that's what's on the chicken. Also making mashed potatoes and gravy, and steamed broccoli.

This spice store is in the metro area where our younger son lives and works, so our next visit there will include a stop at the physical store

8. Pork schnitzel

1st try. With lemon wedges. Some kind of starch - haven't decided on potatoes vs noodles. Green peas in the remaining pan fat (mostly butter) and some capers added. Salad.

It should be good. I've already gotten the pork sliced and pounded thin. It's the last thing to cook, except for the peas.

Using a lean hamburger patty, potato, carrot, onion, and garlic - all fresh. S&P and some Mrs Dash thrown in and in 40ish minutes …a complete meal easy to clean up. Haven’t made one in a while and it is the ultimate single person full meal deal. Haha. Have some sourdough baguette to go with.

Probably munch on some Honey nut Chex Mix after while.
