Beef Wellington was great

More or less New Year eve tradition

Several years ago I entered the market started with the butcher got a nice 1/2 lb of beef tenderloin, then to the frozen section and…no Puff Pastry! We visited every single store in the city - none. So we just had a steak dinner.

Another year i forgot that the pastry should not thaw more than 40 minutes and trying to roll it was a mess.

I do make this dish only once a year, at most.

But this evening it came great.

The only thing I do have a left over and reheating a med rare meat one has to be watchful but it works. I think.
