What's for Dinner, Thurs. Dec. 28, 2023

Butternut squash soup. I have some sage leaves which I will add. They are fried in butter. The soup is spicy.

Sweet potato fries.

Tossed green salad with Caesar dressing.

Ginger kombucha.

Eggnog Greek yogurt with raspberries and chocolate shavings for dessert.

Pork and shrimp fried rice (the pork is from Christmas dinner and the shrimp is from dinner a couple of days before)

6. Seafood

We're in the OBX for the week and there are many seafood shops still open. Today we picked up two dozen right-out-of-the-bay oysters, a beautiful flounder filet and a pound of large shrimp ($3.99/lb!).

This evening, we had the flounder in a Francese style: the fish was sautéed in white wine, butter and capers. The filets were served with yellow rice cooked in chicken broth and steamed asparagus.

Tea and holiday cookies for dessert.

Making cream of mushroom soup with the mushrooms left over from Christmas Eve dinner, and leftover ham and spinach quiche.
