What's for Dinner, Sat. Dec. 23, 2023

Turkey meatballs with spinach and parmesan mixed in. Also some finely chopped vegetables like carrot and celery.

Tossed green salad that I made yesterday with red tip, iceberg, etc. and microgreens from my garden. Caesar dressing.

Dessert: I experimented with this last night and it was a winner. Tonight I will do a full-fledged dessert board. Chocolate hummus with fruit: raspberries and mandarin. Also Greek vanilla yogurt with toasted almonds and pomegranate seeds. Raisin pumpkin seed artisan crackers.

Pomegranate kombucha.

Chicken for my wife.
I'm in Southern Baja California.
My neighbor gave me some nice triggerfish.
Homemade salsa, fresh tortillas from the store in town. Tomatoes (homegrown coming soon), cucumbers, pickled onions and carrots.
All washed down with a Vampira. (Think spicy bloody Mary made with tequila and a good whack of orange juice, sounds weird, tastes good.

4. Family holiday dinner

I invited my daughter's in-laws for dinner and a visit. We had ham, roasted red potatoes, peas, relish plates, cheese, dips, crackers, all kinds of cookies. I drained the pan juices off and made a small portion of ham gravy for the first time. Super rich, and most of it is left. I'm planning to use it when I make split peas soup soon.

I liked that everyone brought food that made it a family dinner. Lots of leftovers, come on over!

Leftovers most likely for Ms K. I cracked a tooth root last week but my dentist can't see me until after Christmas, so I'm eating soft foods only. Sigh.

The good thing about copycat Panera recipes is you know its from fresh ingredients, not something frozen that's nuked. Go-withs are baked acorn squash and grapefruit halves. Wine is a Wisconsin Gewürztraminer that we bought on vacation.

For tomorrow, I made pierogies, a cranberry sauce to top brie baked in little phyllo cups, and tiramisu today. Still need to make borscht, deviled eggs, and maybe some stuffed mushrooms.

but that got canceled due to illness, so I'm looking through the pantry for something to make. It will probably be macaroni and cheese, with roasted red peppers since the jar is open and the last of the little Chinese sausages.
