Back to baking : Red velvet cupcakes with cream cheese frosting

One of the women in my Sunday School Class won the live auction at our Christmas fundraiser for a "Special Occasion Cake".(I do this every year; 6 cakes and the winners can order the cake of their choice when they need it)

So she was having a group of neighborhood ladies in for Holiday Coffee and requested cupcakes.

Delivered them this afternoon. I used a different red velvet recipe and they turned out great. Instead of mixing soda and vinegar, you just put the soda in with the dry ingredients and the vinegar in with the wet. Also with this recipe, eggs are separated with the whites beaten into a meringue and folded into the batter. This is one of my favorite cake techniques.

Two more to go: chocolate pound cake for family Christmas and a coconut cake for a friend who did us a huge favor some months ago.

being smaller, they are easy to overbake and turn out dry.
