In their infinite wisdom, Supermarkets chose to put big-ticket items on sale
TOO EARLY to be safely stored until Christmas!
Wife is working today, so Ahhm cookin'!
So Dinner = Seven Pound Rib Roast
Wife likes it Medium Well. I like it Medium-Rare. (We cook it her way )
Stored uncovered in the fridge overnight to dry it out,
Taking it out of the fridge @ noon to reach room temperature (three hours)!
Since I have an oven with a fan, I have to cook the old fashioned way
Place In roasting pan (no rack) fat side up.
@14:50 Preheat oven to 450 degees.
@15:00 Put in the oven, cook @450 for 20 minutes
Then lower temp to 325 degrees, and cook for 30min/lb.
DO NOT OPEN THE OVEN DURING COOKING!
(You might want to put a sign on the oven door to that effect!)
(Our roast is actually 6.71lbs... so 3hrs 21min @325))
Remove from oven, an let it sit for 20 more minutes, to redistribute the juices.
Carve.
Sides: Sweet potatoes with sour cream and (freshly cooked) bacon
Mesclun Salad: tomato cucumber avocado hard boiled egg crumbled Bleu cheese...
Mocha Truffle chocolate cake for dessert

Preparing The Roast.
This one.
Rub is: 2Tbsp Colman's (dry) mustard, 6 cloves of garlic (minced), 2Tbsp Herbs de Provence,
3 tbsp butter.
