I got off to a late start, but am almost done with the cookies I mail out. Except for the pizzelles, theyre not really very Christmasy this year chocolate chip, oatmeal, that sort of thing.
An issue I often have is that my room temperature is only around 60 degrees, which means that the butter mixture stays a clumpy greasy mess rather than being all nice and emulsified and fluffy. I sometimes have to rest the mixing bowl over hot water to bring it up to temperature.

(10,714 posts)Doing Christmas early with the family so we had to get on it. My wife, Mary, isnt doing the full round of cookies this year so we concentrated on the old family recipe that weve done for decades.
Everyone in the family is trying to battle gravity a little so instead of a White Christmas were doing a Light Christmas.
Still 24 dozen!

(672 posts)And of course, have seen them before. Must be a nice family tradition. I like to bake. This post got me looking at my recipies, but since I don't have anyone to bake FOR, I'll find a couple and donate to local kitchen for the homeless. Keeping a few for myself!
I do have a recipe I make every year: applesauce pumpkin bread.

1(10 1/4 ounce) box spice cake mix
2eggs
1⁄2cup oil
3 T rum
1cup mixed candied fruit, chopped
1cup roasted pecans chopped and
1 cup roasted walnuts, chopped
Mix well the cake mix, eggs, and oil. Stir in chopped candied fruit and the chopped nuts. Drop with 1" cookie scoop (making walnut-sized balls) onto cookie sheet lined with parchment paper. Bake at 350 degrees for 15 minutes, or until toothpick comes out clean. DO NOT OVERBAKE. Makes about 40 cookies
