Cup of soup. made another version of my roasted red pepper/tomato soup.
Tossed green salad with avocado, turkey bacon, tomato, scallion, and red onion. Sliced ham and cheese slices on top. Caesar dressing.
Pita chips with baba ganoush. (Aldi makes a really good twice-baked pita chip--just tried for the first time).
Raspberry kombucha.
Dessert: Dark Chinese tea and a mandarin.

(37,759 posts)I've been making eggplant dishes from the garden, too! Eggplant sandwiches with roasted red pepper and chipotle mayo with basil strips on naan bread, for one. Baba ganoush, as I mentioned in the OP.

We went out for lunch yesterday to my favorite Korean place, which has the best soondoobu around - but more than I can eat at one sitting. So I'm making a quick soup with some leftover chicken, dried mushrooms and their soaking water, and some carrots, and then plan to add the leftovers to the soup, adding more chile paste as needed.
