Summer Noodle Salad With Ginger-Garlic Dressing]
Recipe from the Washington Post. Nice pic there, too.
It has udon noodles in it that I bought at the Asian supermarket yesterday when I was shopping for my kimchi ingredients. Roasted tomatoes, bicolor corn, arugula, yellow zucchini, avocado, and garlic.
The dressing is really good: olive oil, soy sauce, honey, sesame oil, Chinkiang vinegar, ginger, garlic, salt, red paper flakes.
Dessert: sliced cantalope with fresh mint. Earl Grey tea.

(22,854 posts)We both had to work today so a simple supper is in order.
Pastrami Reuben sandwiches on soft rye bread with sauerkraut, thinly sliced onions, Thousand Island dressing and Swiss cheese. Ill pan fry them to melt the cheese. Green salad and dill pickles on the side. Dark chocolate for dessert.

I bought a 5 lb bag of potatoes last week. I decided to use one for my dinner. I groped through the bag to get a large one. The one I pulled out had to be close to 2 lbs. I had to cut it in quarters to cut it for the pot. Needless to day, I have leftovers
