(22,652 posts)After breaking the egg into the skillet, poke holes into the thick part of the whites (sometimes called the 'shoulder') using a fork, knife or even the corner of the spatula. The white will run under the egg and begin to solidify. Just keep on poking around at it until it is done enough to suit you. I flip my eggs for over easy but I still poke around at the hump before I flip them to get them just right

I like my eggs hard boiled, omelets, frittata's, egg bites, over-medium, poached (usually in Shakshuka) deviled, and soft scrambled.

(69,681 posts)But, it was a disaster doing it by hand. The sauce broke while I was making it.
I have a very small food processor (I think it's only a pint) & I have had no problem making it with that.
Now, that's only 3 for 3. Not like I've successfully made it a hundred times.
It's easier now though, as gastronomic chefs have figured out the exact right amount of soy lecithin to use.
I haven't used it, but if I had to make the sauce for a hundred servings of EB in a restaurant, I'd probably use it because there'd be no time to deal with a broken sauce.

(22,652 posts)One thing though: I hate for my scrambled eggs to scorch!! That happens when the cook puts too much milk in with the eggs. The milk cooks faster and caauses the scorching.

When we had extended family get togethers at one particular aunt & uncle's house we almost always had deviled eggs.
My Mom would bring the deviled eggs glass dish: round flat center, surrounded by half shaped egg holders.
I was usually in charge of mixing the egg yolks & ingredients, then filling the whites up. Or sometimes just filling them up.
When I was a kid - soft boiled egg in an egg cup. And solid whites w runny yolks on toast.

(5,539 posts)the pan is full of hot bacon grease to ladle over them and then I'll take sunny side up/turned to pink with a medium yolk. I can handle an omelette as long as it's big and fluffy from being made with 4-6 eggs. They can throw sausage and bacon pieces into it or mushrooms and onions. I don't need cheese on/or in the omelette necessarily but some baby Swiss with the mushrooms and onions is good. No matter which way I have my eggs I like lots of black pepper.
I'm usually quite tolerant but anybody who puts ketchup on their eggs needs to be dragged away from the table and placed in a breakfast re-education camp.

(6,608 posts)The sandwich should be on a good crusty roll and the peppers should be thoroughly cooked and soft. The eggs should not be burned.
Made the mistake of getting one in Maryland after years of not seeing them on menus anywhere. Roll was soft and the peppers were nearly raw.
Now that we live at the New Jersey shore, we can find great pepper-and-egg sandwiches in many places.

(57,272 posts)Use butter in ths skillet and cook them like regular scrambled eggs. The heavy cream adds a delicious flavor.
I also like scramble eggss Mexican-stule...cooked with the spicy Mexican sausage CHORIZO. They're delicious.

that are fried with the yolk smashed but not mixed so the yolk cooks separately from the whites, one on top of the other. Just tap the yolk once. Do not stir. Put the baby spinach in the buttered frying pan first. Then add two eggs. Smash the yoke. Do not stir. Let the eggs cook like that with the whites and yolk separate.

(9,206 posts)Organic grass fed beef tallow is a hot item now - even Walmart carries it. I put lots of beef tallow in a skillet & fry eggs over easy - really runny. If you fry on low heat - the bottom of the fried egg will not even be brown.
Anyway I made this for my friend a few days ago and he said best eggs of his life. Now all the nutritionists are saying to eat good fat!
I have my own chickens because I bake a lot and love raw egg yoke smoothies. Frozen coconut, frozen raspberries, a carrot, various vitamin powders, plus whatever and two raw egg yokes in a VitaMix blender - good fast breakfast.
